Pic D'Orhy: Last year, we didn't run him in the Champion Hurdle
We never thought he's been a champion hurdler or a speedy horse.
He's a really staying, chasing type of horse.

A year on, different discipline but that's interesting given both the trainer and jockey said Pic D'orhy didn't get home over 2m3 at Ascot in January. It is quite a vague statement though "a really staying, chasing type of horse" in regards to dictating targets.
I'd have little interest with him over anything further than 2 miles myself.

Just like Usain Bolt used to travel 100 metres in 9 and a half seconds and win Olympic Gold medals.
Staying horses win races over 3 miles.
Just like Mo Farah used to travel 5 and 10km and win Olympic Gold medals.

You'd be better placed making your point against horses that have already been, run and tried, like Sizing John & Kicking King, who both finished 2nd an Arkle but won Gold Cups, like Best mate who finished 2nd in a Supreme but won 3 Gold Cups
I'd say in the early stages of a horses career, even if they are seen as future Stayers, they can still go close over the top 2m races.
On the whole though you are correct, they rarely actually win them, but they are not without hope.
All in all I don't think Pic D'Orhy is a staying chaser for the festival at least, might get 3m on a flatter track though.

Apologies if this has already been covered but Gordon Says he will be amazed if Envoi Allen will go over 3 miles in the UK in his novice season and in his heart believes he will go to the Marsh, but maybe will go over 3 miles in Ireland at some point.

There's a world of difference in the distances you've used.
You remind me of a kid who thought he was very smart, until I asked him what the distance was to the moon ?
He replied, "about 23 miles".
And he was being serious.
Your analogy to be even close to being accurate should be how good would Usain Bolt be at running over 300 metres.
But I bet he'd still be decent at that. So it doesn't suit your argument.
And using Mo Farah actually negates your argument.
He won Olympic titles at both 5000 metres and 10000 metres. That's twice the distance.- He then wasn't bad at Marathons !
But you're suggesting horses going from 2 mile to 3 mile are almost different breeds.
Class is class, and a class horse will be able to compete at a high level over most trips, although the precocity for speed will wain as they age.
And particularly before we had championship races over the intermediate trip, it was common for horses to run over 2m and end up in the staying division.
It's a natural progression for a mammal, to start to lose speed and become more stamina laden as you age.
